Paleo Zucchini Bread

Zucchini bread is one of the best sweet treats around. It is as delicious as it is nutritious while it is packed with veggies and fiber. This will be a favorite snack for the whole family.

Ingredients:

    • 3 eggs
    • 2 tbsp of honey
    • 1 banana, mashed
    • 1 cup of zucchini, grated
    • 1 1/2 cups of almond flour
    • 1/4 cup of coconut flour
    • 1/4 cup of coconut oil, melted
    • 2 tbsp of almond butter
    • 1 tsp of baking soda
    • 1/2 tsp salt
    • ½ tsp cinnamon

Instructions:

    1. Preheat the oven to 350 degrees F.
    2. Line a loaf pan with parchment paper
    3. Squeeze excess moisture out of the shredded zucchini
    4. In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt
    5. In a separate bowl, add the eggs, honey, banana, coconut oil, almond butter, and cinnamon.
    6. Use a hand blender to combine. Add the dry ingredients to the wet and stir to combine.
    7. Fold in the shredded zucchini.
    8. Pour the batter into the loaf pan.
    9. Bake for 40-50 minutes or until the loaf is set.
    10. Remove from the oven and let cool completely before serving.
