Paleo Slow Cooker Roast Beef
Roast beef is one of the most savory comfort foods. This recipe is perfect to add to a family dinner night or even meal prep days! With sweet potatoes and yummy carrots, this recipe is sure to impress.
Ingredients
- 3 lbs of beef chuck roast
- 3 sweet potatoes
- 4 carrots
- 1 onion
- 2 garlic cloves
- 1/3 cup of balsamic vinegar
- 1 ½ cup of beef stock
- 2 sprigs of fresh rosemary
- 2 bay leaves
- Sea salt and ground black pepper to taste
Instructions
- Cut the carrots and sweet potatoes into big chunks
- Slice the onion
- Mince the garlic
- Season the roast with sea salt adn back pepper
- Place the meat in a slow cooker and top with minced garlic, balsamic vinegar, beef stock, rosemary leaves, bay leaves, and onion
- Set the slow cooker to low and cook for 3 hours
- Add the carrots and swet potatoes to the slow cooker
- Increase heat to high and cook for an additional 4 hours
- Once the vegetables are soft, remove the bay leaves and rosemary.
- Serve!
