Paleo Slow Cooker Roast Beef

Roast beef is one of the most savory comfort foods. This recipe is perfect to add to a family dinner night or even meal prep days! With sweet potatoes and yummy carrots, this recipe is sure to impress.


  • 3 lbs of beef chuck roast
  • 3 sweet potatoes
  • 4 carrots
  • 1 onion
  • 2 garlic cloves
  • 1/3 cup of balsamic vinegar
  • 1 ½ cup of beef stock
  • 2 sprigs of fresh rosemary
  • 2 bay leaves
  • Sea salt and ground black pepper to taste


  • Cut the carrots and sweet potatoes into big chunks
  • Slice the onion
  • Mince the garlic
  • Season the roast with sea salt adn back pepper
  • Place the meat in a slow cooker and top with minced garlic, balsamic vinegar, beef stock, rosemary leaves, bay leaves, and onion
  • Set the slow cooker to low and cook for 3 hours
  • Add the carrots and swet potatoes to the slow cooker
  • Increase heat to high and cook for an additional 4 hours
  • Once the vegetables are soft, remove the bay leaves and rosemary.
  • Serve!
