6 slices of bacon
6 large eggs
Salt and pepper to taste
1/4 cup shredded cheddar cheese
1 tbsp chopped fresh chives
Preheat the oven to 375°F and line a muffin tin with 6 muffin cups.
Cook bacon in a skillet over medium heat until crispy, then drain on paper towels and chop into small pieces.
In a small bowl, whisk the eggs and season with salt and pepper.
Divide the bacon among the 6 muffin cups, then pour the egg mixture on top.
Sprinkle cheddar cheese on top of each cup.
Bake for 18-20 minutes or until the egg cups are set.
Remove from the oven and let cool for a few minutes before garnishing with chopped chives.
