Cajun Shrimp and Sausage Skillet

  • 3 small bell peppers sliced (optional for color: red, green, orange peppers)
  • ½ yellow onion sliced
  • ¼ cup of sliced green onion
  • 12oz of andouille sausage sliced
  • 1lb of peeled and deveined shrimp
  • 2 tbsp of avocado oil
  • 1 tbsp of finely mined garlic
  • ½ tbsp of cajun seasoning
  • The juice of 1 lemon
  • Salt and Pepper to taste


  • Heat a large skillet over medium to high heat
  • Once the skillet is hot, add the avocado oil
  • Add the minced garlic to cook for roughly one minute
  • Add the sausage to cook for 3-4 minutes and brown on both sides
  • Add the sliced bell peppers and onions
  • Season with salt, pepper, and the cajun seasoning to taste
  • Continue cooking for 3-4 minutes
  • Add the shrimp and toss to combine
  • Cook for 2-3 minutes until the shrimp is cooked
  • Remove the mixture from the skillet and add the lemon juice, green onion and more seasoning to taste
