Cajun Shrimp and Sausage Skillet

Ingredients:
- 3 small bell peppers sliced (optional for color: red, green, orange peppers)
- ½ yellow onion sliced
- ¼ cup of sliced green onion
- 12oz of andouille sausage sliced
- 1lb of peeled and deveined shrimp
- 2 tbsp of avocado oil
- 1 tbsp of finely mined garlic
- ½ tbsp of cajun seasoning
- The juice of 1 lemon
- Salt and Pepper to taste
Instructions
- Heat a large skillet over medium to high heat
- Once the skillet is hot, add the avocado oil
- Add the minced garlic to cook for roughly one minute
- Add the sausage to cook for 3-4 minutes and brown on both sides
- Add the sliced bell peppers and onions
- Season with salt, pepper, and the cajun seasoning to taste
- Continue cooking for 3-4 minutes
- Add the shrimp and toss to combine
- Cook for 2-3 minutes until the shrimp is cooked
- Remove the mixture from the skillet and add the lemon juice, green onion and more seasoning to taste
