Paleo Halloween Cake Pops

If you are looking for a fun, delicious way to celebrate Halloween this year, try these delicious paleo cake pops! You can decorate them to any spooky design and serve them at your next party (or keep them all to yourself!).

Ingredients:

  • 3 tbsp of coconut flour
  • ¼ tsp of vanilla bean powder
  • 2 tbsp of collagen peptides
  • 1 tbsp of arrowroot starch
  • ⅛ tsp of sea salt
  • ⅓ cup + 2 tbsp of coconut butter softened
  • 1 tbsp of coconut oil
  • 3 tbsp of honey
  • ½ cup of dairy free & soy free chocolate 

Instructions

  • In a large mixing bowl, combine the coconut flour, collagen, vanilla bean powder, arrowroot starch, and sea salt
  • Add in the coconut butter, coconut oil, and honey, then mix well 
  • On a plate lined with parchment paper, roll the batter into cake balls, you should yield 6 
  • Place in the freezer for 15-20 minutes until completely hardened
  • Melt the chocolate in a double boiler and set it aside once it is all melted
  • Insert lollipop sticks into the cake balls and dip them into the melted chocolate 
  • Rotate slowly to coat evenly, then allow the excess to drip back into the bowl
  • Place the cake pops back into the freezer to harden for 15-20 minutes
  • Decorate with icing or other methods to create your spooky characters!(If you are adding sprinkles to decorate, add them before freezing the chocolate coating)
