Low Carb Reuben Sandwich Cabbage Cups
If you’re looking for the best way to use your left over corned beef, or craving a yummy Reuben sandwich, then you’ve found the perfect solution! These cups are a fun way to enjoy a twist on the classic Reuben sandwich.
Ingredients:
- 1 lb. cooked corned beef
- 16 oz. bottle sauerkraut, well drained
- 1 small onion, chopped
- 1 T olive oil
- 1 small head cabbage
- 3/4 cup Thousand Island Dressing
Instructions
- Add the bottled sauerkraut into a jar and let it drain
- Cut away the core from the head of cabbage, and separate the cabbage into cups.
- Cut up one pound of leftover or deli corned beef into small cubed pieces.
- Chop the onion.
- Heat olive oil in a non-stick frying pan over medium to high heat and brown the onion.
- Add the corned beef and cook, turning several times, to lightly brown.
- Fill each cabbage cup with corned beef.
- Add a few ounces of well-drained sauerkraut over the corned beef.
- Then top with the desired amount of Thousand Island Dressing
- Serve and enjoy!
