Ingredients:

For the crust:

  • 1 ½ cups almond flour
  • ¼ cup unsweetened cocoa powder
  • 2 tablespoons powdered erythritol
  • ¼ cup melted unsalted butter

For the filling:

  • 16 oz cream cheese, softened
  • ½ cup powdered erythritol
  • 2 large eggs
  • ½ teaspoon peppermint extract
  • ½ cup sugar-free dark chocolate, chopped

For the topping:

  • ½ cup heavy cream
  • 2 tablespoons powdered erythritol
  • ½ teaspoon peppermint extract
  • Crushed sugar-free peppermint candies or crushed sugar-free chocolate, for garnish (optional)

Instructions:

  • Preheat your oven to 325°F (165°C) and line an 8×8-inch baking pan with parchment paper.
  • In a mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, and melted butter. Mix until well combined and the mixture resembles coarse crumbs.
  • Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and set aside.
  • In a separate bowl, beat the softened cream cheese and powdered erythritol until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition. Stir in the peppermint extract.
  • Fold in the chopped sugar-free dark chocolate until evenly distributed.
  • Pour the cream cheese mixture over the baked crust and spread it out evenly.
  • Bake for 25-30 minutes or until the edges are set, but the center is slightly jiggly.
  • Remove from the oven and let the cheesecake cool in the pan for about 30 minutes, then transfer to the refrigerator and chill for at least 4 hours or overnight.
