Ingredients:
For the crust:
- 1 ½ cups almond flour
- ¼ cup unsweetened cocoa powder
- 2 tablespoons powdered erythritol
- ¼ cup melted unsalted butter
For the filling:
- 16 oz cream cheese, softened
- ½ cup powdered erythritol
- 2 large eggs
- ½ teaspoon peppermint extract
- ½ cup sugar-free dark chocolate, chopped
For the topping:
- ½ cup heavy cream
- 2 tablespoons powdered erythritol
- ½ teaspoon peppermint extract
- Crushed sugar-free peppermint candies or crushed sugar-free chocolate, for garnish (optional)
Instructions:
- Preheat your oven to 325°F (165°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, powdered erythritol, and melted butter. Mix until well combined and the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and set aside.
- In a separate bowl, beat the softened cream cheese and powdered erythritol until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the peppermint extract.
- Fold in the chopped sugar-free dark chocolate until evenly distributed.
