Mushroom & Feta Stuffed Bacon Wrapped Chicken Thighs

This chicken is wildly good. Like, it thoroughly surprised me good. Plus, it’s easy to put together and doesn’t take too long with the total cook time being about one hour (15 minutes for prep, 40 minutes to cook).

So you can be absolutely sure that whoever you make this for or with will be very pleased. But don’t worry if it’s just for yourself either! This chicken is more than worth it.

I know you’ll only get more hungry the longer I talk about it, so I won’t be too mean. Let’s get into what you’ll need!

Ingredients:
Once again, our portions will be for two servings. With that in mind, here they are.

  • Four skinless, boneless chicken thighs
  • Half a tablespoon of butter
  • One cup of sliced mushrooms
  • 12 fresh sage leaves
  • Three cloves diced garlic
  • 1/4 cup crumbled feta cheese omit for strict paleo and AIP
  • Eight pieces of bacon

Okay, did you get all of that? Good. I’m glad. Let’s talk about how to put it all together, and there’s a bit more to it, so stick with me.

Instructions
Preheat your oven to 400 degrees.

Melt butter in a large saucepan. Once the butter has melted, add the mushrooms and garlic. Sauté until the garlic is browning and the mushrooms have softened. Then add the sage leave and cook until wilted.

At the same time, you should put each chicken thigh between two layers of parchment paper or plastic wrap. Then, pound the chicken with a mallet until each thigh is around half an inch thick.

After that place the chicken thighs on a cutting board, add a line of sautéed mushrooms, herbs and feta cheese on the middle of the thigh itself.

Wrap chicken around the filling.

Use two strips of bacon to wrap around the chicken thigh, securing the filling.

Place it seam-side-down in a large cast-iron skillet.

Put the whole skillet in the oven and cook for 30-35 minutes. Then, turn the broiler on high and move the skillet to the top rack in the oven. Finally, broil on high for five to seven minutes, or until the bacon is crispy and deep red.

Then you’re done! Take the skillet out of the oven, let the chicken rest for 10 minutes and enjoy!
